What Amp for a Single 12" Hifonics Zeus Sub (500RMS)??

neither one of those is really gonna work out good for what you are trying to accomplish. if you haven't bought the sub already I would get something different if those are the amps you want to use. You would be better off buying a dedicated four channel for your highs(like the first amp you linked) and a mono sub amp that does 400-600 rms at 2 ohms for that zeus sub.

 
That amp will work but you will be wasting half the power that amp can produce because of the ohm load of your sub. It might sound alright but you should really find an amp that does max power at 2 ohms. You seem to be pretty dead set on hifonics. Unfortunately i think all of their mono amps do max power at 1 ohm.

 
On another note if you plan on potentially buying another matching sub down the road that amp would be able to handle two of those subs although you would be underpowering them a bit.

 
After reading around I decided to go with:

Instead of a dual 4 ohm sub, I went with a dual 2 ohm sub, so it can take full advantage of the 600RMS at 1 ohm provided by the Amp.

Hifonics Zeus 12" (Dual 2 Ohm, 500RMS max)

Hifonics BXI 610 (mono, 600W RMS @ 1 ohm)

Will the above two work together??
