Assuming that the subs are of the same quality, would a 12" sub rated 750 watts hit as hard and sound as good as 2 12" subs that together equaled 750? basically is two any better than one? thanks

Theoretically +3db. Well, assuming that you mean that 750w is powering the sub(s).
