Pioneer AVH-P4400BH Display Mode

I just had this unit installed in my MX-5 yesterday and I am amazed at all it can do. However I guess as a newbie I am a bit overwhelmed. My question is this. What do I do to turn off the unit, including the screen display, while still driving? According to the manual, I am supposed to press the SRC/OFF button, but this puts the screen into "demo" mode. What am I missing? Thanks.

Page 10 of the manual. Press and hold mute to toggle the demo function while the unit is off.
