I would never put a light-colored suede anywhere that is going to be sat on, rubbed on a lot, or on an upward-facing flat surface where crumbs, dust, hair, lint, liquid, etc etc could possibly land on it, or where it could get scratched. It will look awesome for a while, maybe a year or two if you are really careful, and then it will probably start to look like junk.
Most of my interior is covered in black suede, but I just used two-tone leather on my seats.
Have you thought about doing black leather/black suede? Do you have a lot of gray interior pieces? Maybe do black/gray leather?
I don't think I would like the ostrich. But it's your car and I dig people doing unique stuff instead of just cloning the same things over and over.
If you do the suede, look into alcantara. It looks and feels exactly like suede, but is a lot more durable, stain-resistant, and it is cleanable. It also doesn't fray like other fabrics.
