Ohms with bridged config.???

So I just got a new amp...here are the specs:

001399: MEMPHIS 16-SRX 1.500$1,399.00 TT

One question I have is, if this is a mono block amp, why are there stereo inputs and outputs for 2 channels?

Also, after reading some FAQs on crutchfield's website, I'm wondering if I can safely run a 2 ohm load in a bridged configuration with this amp. It states that it's stable at 2 ohms with 500 watts, but not sure if that means I should wire 2 subs to one channel and the other 2 subs to the other channel..which would be running at 4ohms (I'm running 4 svc 8ohm subs)

If it's a mono amp then it has only one channel, you cannot bridge it. They will usually provide two sets of terminals just as a convenience, they are connected internally.

i payed $300 for it (I think the link I provided was for bulk pricing). so having stereo inputs doesn't mean it's got 2 channels? In the manual it has a diagram for a bridged configuration, but states that it is a monoblock. how is this possible?

You can't bridge it. The two terminals are parallel connected to one mono amplifier inside. If you parallel two of your 8ohm subs per terminal, then each terminal will see 4 ohms. Since they're parallel connected inside as well, thats 4 and 4 ohms = 2 ohm final load = perfect match. Each sub will see 125w. I'm guessing you have Punch HE woofers? You should have gotten a 1000w RMS monoblock instead.
