On the menu tonight: Homemade Eggplant Parmesan

Nice crunchy breaded and fried eggplant. This stuff is seriously a treat on its own.

Homemade sauce with all fresh ingredients (mushrooms, onions, fire roasted tomatoes, sundried tomatoes, roasted red peppers, basil, parsley, thyme, rosemary, and beef stock)

Ready to go in the oven, topped with freshly grated parmesan and fresh mozzerella. Only bad part is I can't find buffalo mozzerella in the stores around here.
