Is that 500 per sub give or take?

I had a 15 inch L7 last year and had it hooked up to a JL 500/1 and it pounded with some serious excursion. You will be fine with those amps but obviously it would be louder with more wattage.

why not use 1 amp that can feed those 2 woofers?

using 2 smaller ones isnt always a good idea, it gets more complicated/less flexibile/more consuming
