well, most HU's that come out today say they're ipod compatible. great. what other mp3 players can u use w/Hu's?

You can use any .mp3 player with any HU that has an appropriate input compatible with an output on your mp3 player.

As iPod has taken the world a bit by storm thus far Apple is the only company that has a direct interface with multiple HU manufacturers' products to actually control the player itself.

so in other words, u would have to use the mp3 player to control the music instead of using the HU?

Correct, because you'd have to connect a non-ipod mp3 player to your headunit via rca connectors which do not offer controls of the mp3 player but just a low level analog connection of the audio signal.
