How different are these two head units?

I've been looking at head units for my 1968 Mustang. I've never had a problem with Pioneer electronics, so I automatically went to them, but if you have a better idea for the same price, then I am all ears.

Anyways, I've been looking at the Pioneer DEH-P510UB(Similar to DEH-P5100UB), and the DEH-P7100BT. Bluetooth is not significant for me, I don't really talk in the car anyways. HOWEVER, I do not want to skimp on sound quality. Both have a 7 band Graphic equalizer, and what appears to be the same audio features, as well as the same passovers. The P510UB is substantially cheaper than the P7100BT and I will get that if the only difference is the Bluetooth.

However like I said before, if you have a better head unit in mind all around for sound quality, than please, speak up (In the $150-$250 range, please)!
