Ok, so here's a little theory that I have, and I have yet to have anyone disagree with me after trying it:
Put a bag of chips in the freezer for about an hour. The longer the better. Since the chips is now 'frozen', the spices and herbs on the chips now stick MUCH better to the chip. Plus, the water in your hands will no longer dissolve onto your fingertips resulting in he cheesy mess known as Cheeto fingers.
I just found an aold bag of Pepper Jack Doritos that are about 2 months old, and you know what? THEY TASTE GREAT!!!
