In our Louisiana style restaurants we got crawdads imported from Louisiana and steam kettle pan roast as well with spicy LA style sausages.

this pic I Drizzled with extra spicy garlic butter, lemon pepper and cajun seasoning. Flaming out the @ss the next day spicy.

there we go lol.
i cook EVERYTHING from scrach. with the exception of noodles.

for example ill give you one secret on the best meatloaf sauce in the world

take the grease from the meatloaf put it on low.

salt garlic, crush black pepper(the **** in the grinder that's like 5 bucks) basil with a tad of Cayenne pepper and a little onion powder into tomato sauce

heat unsaulted tomato sauce on low heat..

combine enough flower to make a paste(in hte meatloaf grease).

add tomato sauce and and heat off. add a tad of water(to keep it from burning as the pot cools and make it the correct consistency)

the flower helps with heartburn too.

if they ain't a real cajun they ******* up.

what they put in the crawfish boil? lol

that Etouffee is too red. too much tomato paste.. yuck it looks like a creole but not really.

manicotti stuffed with spicy shrimp and blue point crab. its not neat becasue i didn't have room and didn't "dress" it

Thats a side dipping sauce. I like it better than the normal cajun boil. Way more flavor.

Lots of cayenne peppers and some habeneros specially requested. I like spice man.
