OK...the one and only thing I know regarding High and Low pass cross filters in head units is that one of them can take the bass completely out of your door speakers...which one does this? and what does the opposite do filter do?

High PASS = Pass HIGH frequencies

Low PASS = Pass LOW (bass) frequencies

AKA, high pass = block low (bass) frequencies

low pass = block high frequencies

does it affect just your door speakers....or subwoofers as well?

They high pass is usually tied to your front + rear pre-outs, while the low pass is usually dedicated to the sub channel.

so you can block lower frequencies to the front, and block the higher ones to the sub.
