I had to accomplish 20 of an item;

Now I'm required to accomplish 40;

Any protection for this?

There should be.

What if they upped it to 360?

I would think that's just part of getting shitted on as an employee - I don't really know what legal recourse you have against getting work piled on you. You could talk to your superiors, let them know that it's flat-out impossible to complete if it is. But ultimately, I don't think giving people too much work is against the law...
