The amp is: Rated Power @ 1 ohm: 1200 x 1

Why do you think that running two 500RMS subs off this amp is going to kill them? I usually run at least 100RMS more than my subs can handle and dial it down if I need to. That way I know I'm getting full potential and it leaves you more headroom for the dynamic peaks. You just don't want to run test tones or loud music for long periods overheating the subs. The key is setting your gains properly.
