How many component sets come with 8's? I couldn't even begin to fit them.

Not a whole lot.

DLS has a set with 8" mids. The Memphis I'm using have an 8" mid. Rainbow has a set. Illusion Audio had a set back when they were in production. I think Morel might have a set.

Focal actually has a set with an 10" mid.

That's all I can think of off hand. There's probably more that I'm not recalling.
