Can all 4 channel amps do this?

My amp doesn't have an input jumper

 
Probably because your amp doesn't need an input jumper. But yes, you can bridge any 4-channel amp down to two channels (bridge the front 2 channels and bridge the rear 2 channels), and run the L signal to one side and the R signal to the other side

My guess (since I'm not extremely familiar with them) on that Xtant is that the jumper allows you to either use a single pair of inputs for both front and rear, or separate inputs for front and rear.

 
if the speaker is 4 ohms, it will see 4 ohms. The amp will be running each single channel as it had a 2 ohm load, then when you wire those to one speaker it's a bridged channel at 4 ohms...

Whatever impedance the speakers are. If you have 8ohm speakers, the amp will "see" an 8ohm load. 4ohm speakers, the amp will "see" a 4ohm load.

Now that you ask that question, I think what you may have been trying to think of was that when you bridge an amp, each channel will "see" half the load. So, if you bridge a 4ohm speaker to two channels, each channel would "see" 2ohm. But, that doesn't change anything. You still have a 4ohm speaker, and the amp will output it's 4ohm bridged power rating.
