what model aq subs are you plannin to get?
^^^Just recently got a new ride, an '08 Vibe so I got a hatchback design to work with. I'm not sure how many cubic feet I'm dealing with, but I'm thinking there's about 7 or so back there. Anyway, I'm definitely going with some Audioque HDC3 subs, I'm just wondering what setup I should go with? A couple of 10's? or a couple of 12's? Or just 1 15? Or maybe even 3 10's? I'm thinking 3 10's would slam in a hatchback, but I have heard before that subs in uneven numbers isn't a smart choice? Anyone got any advice?

Okay, keypoints.
Three 10's vs two 12's - roughly same amount of airspace require for standard ported applications
Cone area is very close - three 10's have a cone area of 235.5 whereas two 12" woofers would have 226.08.
Two 12's vs three 10's - I'd go two 12's myself. With three tens you're not gaining any significant cone area and the three woofers are going to require more power than the two, generally speaking.

It all depends if they are efficient motors. efficiency plays a big roll in sound.So then wait, another thing, the fact that there is 3 motors working and therefore more motor strength to work with, wouldn't that essentially mean more SPL? (I'm aware other factors go into it but isn't that the gist of it, more motors means more power?)
