2/ 10" vented OR 2/ 12" sealed

I have a space in my trunk that is roughly 34.5" wide by 15" tall and around 18" deep. ( i can go shallower and a max of about 19.5" deep)

Well to me those dimensions equal 5.39 cubic feet on the outside and...4.25 cubic feet inside. (Anyone care to double check?)

So with that much room what would you do? 2 10" in a vented box or 2 12" in a sealed box? Or maybe something else?

Oh ya, the subs are pioneer premier ts-w2504spl (10") and ts-w3004spl (12")

2 12" Sealed in a vehicle.
I would suggest this as well. There is no need to go with a ported design in such a small space. You will achieve two things by doing this - more displacement by going with 12's and a nice tight controlled bass response from the closed box design. This will result in 'aw' factor when you want quality listening and when you crank it.

So go with 2 12" sealed. Is that too big of a box? should i try going something smaller then? what size of box would you recommend for those subs? Dimensions of box? and could i go with an angled box instead of perfect square?

Gee, those subs look pretty beefy. Unfortunately, they don't give you the T/S specs on their site, so you're forced to go with their general recommendations. If it were me, I'd go with external dimensions of 30-32" x 13" x 13". 1" MDF with double thickness baffle and countersink the subs. Use a divider to separate them and add some fibreglass - R8 or R12 should do it.

The shape should allow you to choose between having them rear or upward firing.

I have never heard a vented box, so i'm skeptical about putting them in a vented box...sealed box on the other hand is always a good choice.

Another question, and its kind of a repeat from another post, but how would these stand up to kicker L5's in a box about the same size....

And finally, what the heck is double thickness baffle or baffling.. never heard about that before.

The baffle is the side you mount the drivers on. Double thickness baffle refers to glueing two boards together for extra rigidity. So in your case, glue two 1" boards together to get a 2" thick baffle. Then mount your drivers to that.
