Well its 27 degrees here which isn't that cold, but it snowed all day today and I had to work in it. I got home kinda late, but decided to prepare some comfort food. I made Chicken Corn Chowder.
For those who are cooking impaired, this one is easy.
Dice 1 pound of chicken breasts ( I like a lot of meat) and put in a large stew pot
Season with creole seasoning and garlic powder and add a large dab of butter.
Toss in the pot over high heat until chicken turns white. Add 1 can of chicken broth, and let simmer over medium heat. Peel and dice 2-3 large potatoes and add to the pot. Add 2 cans of Cream of Potato soup and 2 cans of Sweet corn. Stir all of the contents together. Cover and let it simmer over med-low heat for about 1.5 to 2 hours, or until potatoes are soft. Serve.
