I would like to either add a cap bank or another hc2400.

Cost about the same but I think caps would benefit me more at this point.
if your worried aboout over voltage just grab 6 of the 2.7 volt caps. i see 10% fluctuations in voltage and never seen any caps pop. no thats just small surges not constant voltage. which in your case i doubt it will damage them.

the caps do 2 things ! the discharge about 10x faster than you alternator so it stabilizes voltage and puts less stress on your alternator 2 it helps keep current consumption lower be being able to discharge with the alternator. in my experience using caps in this fasion is costly but the benefits are awesome. if you cannot add another alternator use a farad per watt and you will never have issues. with a kw Id run 2 bands of 2500s and never look back.

ill warn you though. you d have to realise that the caps do need to be recharged so between notes the alternator recharges them this is why having enough storage capacity is important. its still better for your alternator to try to charge continuously instead of shock loading it.

from what i remember the data sheet says otherwise..

i dont think id run 5 instead of 6 unless you're really hurting for the small cost of an extra capacitor. you dont want a supercapacitor failing catastrophically in your vehicle

a catastrophic failure of a supercapacitor in a vehicle might be louder than the subs in said vehicle

 
the ratio for absolute maximum voltage seems a little higher, but here's the spec sheet since it wasnt included in the OP. it's not 10%.

3.25v per cap results in an absolute maximum of 16.25v with 5 in series. now that seems reasonable, but i cant tell you how badly ESR will wreak havoc later on when you charge them on a cold day when your alternator regulated at over 15v and it so happens one cell is very close or beyond 3.25v. the cost of balancing the caps absolutely outweighs the cost of using 6 capacitors instead of 5.

voltage regulator go bad and can fault into overvoltage, it's rare, but it's something else to consider.
