So parametric has extra setting for center frequencies and bandwidths.When you're making EQ adjustments, there are 3 parameters to be aware of - amplitude (how much you're boosting/cutting the frequency), the center frequency, and bandwidth (how far above/below the center you're adjusting). A graphic EQ has the center frequencies and bandwidths fixed. A parametric EQ allows you to adjust all three, although the number of center frequencies you can choose may be less.
Both have their uses...although setting large graphic EQs with lots of resolution pretty much requires use of an RTA.

I personally use parametric. I feel it gives you more options. You select the center frequency, Q factor, and whether you want to amplify it or decrease it. Graphic you can only choose whether to amplify/decrease, the frequency range is predetermined.
Graphic has 7 bands though, Parametric you can only select 5. But I feel you get better tunability with the parametric.
