Can someone explain what exactly this is? What's considered good or bad about it? Is there a certain peak number to try and achieve? How do you find it? Do leather vs. Cloth effect it?

Is cabin gain and cabin peak the same thing? How important is this to a daily rider built for music?

Cabin gain is just a boost in the lower octaves. It just happens.

Peak is just that. The resonance peak frequancy of a car. Every one will be different.

how much the wave has to travel is one factor to determine it basically car shape and car length. Your panel's resonance affects it as well. If you really want to manipulate it, you'll need a term lab and a spare sub in a sealed box you can use to see your transfer function.
