Well finally replaced my 30 year old gas grill ive been using as a charcoal grill.
picked up a char-broil silver smoker for 150 from wally world and a 21 pound beef brisket.
First things first lets clean this nasty *** kitchen (this is just from me being away 2 weeks my uncle is a slob)

Next step the MEAT!!!!!:
Next is some dry rub.(blackening seasoning and alil magic BBQ seasoning most of all the Cajun rub.
Now we need to get a nice coal bed started (only picture i took) but i use nothing but 80/20 mix of hickory chunks and mesquite chips for the first 3 hours of smoking. after three hours of that its a 90/10 mix of charcoal and hickory chips.
