Yeah it's a aftermarket headunit. The harness connects to the headunit with the ground wire in it, so that means the ground wire connects directly INTO the headunit.

Regarding the picture I made in my first post, what caps out of that box is recommended for wiring the headunit? Could I use all of them or just selected ones E.g just the red ones with rings on them?

What kind of crimp terminals should I use for car headunit wiring? non insulated or insulated? Would these insulated terminals work?

The black ground wire is in the harness. The harness connects to the headunit directly. It cannot be grounded to the chassis or battery. It is just designed to connect directly to the headunit. Should I connect it directly to the headunit?

What does the ground wire look like? I hear that your meant to put it on a headunit's metal back. I think it's the black wire but there is one in the headunit harness that connec's directly to the headunit and not the metal.

I can't find shops in New Zealand that sell aftermarket harnesses. Will my solution work or not? If I cut the connector from my new harness and cut the connector of my old harness and connect the old wires to my new harness?
