This is how I do it. You need: Huge aluminum pot w/ drain basket. Zataran's seasoning (2 bottles liquid, 4 pouches, 2 jugs powder) butane burner and butane Ice chests ALOT of salt (7-8 boxes) few boxes of Tony's Few bags of ice BEER. Wash the crawfish while they are in the sack. Put the live crawfish in large ice chest and fill w/ water, stir em around and drain after 2-3mins. Pick out any dead ones. Pour 2 boxes of salt on em and cover them w/ water. Let them set for ~30mins. Drain, repeat. Fill huge pot ~1/2 w/ water and add seasoning. 2 pouches, 1 bottle liquid, gallon of powder. (more depending on size of pot, water will be RED done if right) Bring to boil. Once boiling put crawfish in drain basket and lower in. Cover and bring it back to a boil and let em boil for 7mins. After 7mins, kill the fire and open pot. Put a bag of ice on the crawfish and cover again. Let it set for 7mins more. After that, drain te crawfish and put into clean ice chest. As you pour em in, sprinkle Tony's on em. Eat them lil ****ers We usually boil at least 80-90lbs for the family. Have boiled up to 500-600lbs for parties.
