Adjustable Amps

so im doing a science fair project for school. and i was wondering if there is a such thing as a 2 channel amp where i can adjust how many watts i want? if there is, any suggestions on where i can get one?

they are all adjustable.......its called the volume knob....it just happens to be on your headunit tho

if i use the knob would i know the amount of watts being flowed? or would i need a meter to measure how much watts are being flowed through?
