Yeah 2v is plenty. If it's that big of a deal add a line driver after it. Most of the time noise is not from the preout voltage.

A 6 channel and a single sub amp would be my choice. Or a 2ch, 4ch and a sub amp. You don't need 2 channels for subs.

Higher preamp voltage is to reduce noise, but you generally don't get noise on the subwoofer channel.

Yeah, put the probes on the power wire and ground wire of the amplifier. Multimeter on DC.
Do not put it on the wires that go to your speakers. M
