In a '99 Cavalier, you can remove the stock radio with no problems. The 2000 model introduced the radio with the data bus running through it.

If your stock radio has Theftlock and you remove it, you'll need to enter a secret code to make it work again if you want to put the stock radio back in the car.

 
If it's a 2000+, there's a special relocation harness you can buy to keep the factory radio in the trunk and integrate an aftermarket head unit. Another option is a device that replaces the radio and simulates the data bus, but it's more expensive than the relocation harness.

However, if your Cavalier is a 1999, you DO NOT have to do this. There will be NO problems with removing the stock radio except that it MIGHT need a code entered to work again when you put it back in (and even then, your local GM dealer can reset it for forty bucks).

I'd get a second opinion at another shop.
