Baked Penne with Italian Sausage, Charred Tomatoes, and Balsamic Roasted Onions

seriously. this dish was rediculously easy to make, not expensive, can be afforded on a college budget. this whole dish cost about 15 dollars to make, served two, with leftovers for the entire week.

This is a nice easy rustic dish with simple ingredients.

Ingredients

1 lb penne pasta cooked and cooled

2 yellow onions wedged

1 lb whole milk mozzarella cubed

1 head garlic sliced

several sprigs of rosemary picked

6 roma tomatoes halved

2 lbs spicy italian sausage cooked, cooled, and sliced

2 tbsp crushed red pepper

approx 1 cup of good red wine (that you would actually drink) i had chianti on hand

salt

pepper

olive oil

1/2 cup chicken stock

balsamic vinegar

I see our actions justified by the fact that we were eating a very, very small portion of what we would just end up throwing out every night anyways. Usually in the area of over 15-20lbs worth.

It's fucking ridiculous. They can afford to waste money on food like that, but couldn't give me any hours.
