How much stronger/harder does ~1000-1200 watts hit compared to 500-600?

That is what some claim, however, that is nothing you should go by. There are far to many variables that will dictate the exact kind of response you get from doubling power.

While Pro has the true correct answer, doubling power typically only sees a 1db increase across lower db musical vehicles. It typically takes doubling cone area and power to actually see a 3db gain. To reiterate, Pro has the more correct answer with "there are numerous variables that come into play to determine output gains"
