where you set the HPF for the mids will also make a diff on power handling...

This^^^^ set it low and they will blow on less than rated, set it higher and they might take more than rated. If you have to ask I would stick with the rms rating and set the gain, and hpf properly.

Re: How many watts for these 3 way focals?

I set the gain to slight distortion and then lower it down a couple notches so I never have to worry about them going into distortion if I dont go over the volume I set them at. And I always run my mids at 80hz.... that will be fine for 80 watts right?

Re: How many watts for these 3 way focals?

If you can install a more powerful amplifier, then that's usually better. An 80watt RMS amp will have audible distortion if you actually run 80watts to the speakers. In fact, it may start running out of steam before then. So, a 100-150watt amp shouldn't really hurt anything. Some SQ show cars have full range mono block amps powering each individual driver. Granted, I suspect the improvement in SQ will be on a logarithmic scale relative to the expenditure. Using DSP to run the speakers active combined with a modest amplifier will probably sound a lot better.
