Would it be OK to run the Rainbow Germanums active off a pair of Zapco 200.2 (50x2) for the tweeters and Zapco 360.4 (up to 180x2) for the mids? I know I'll be losing the advance passive xover, but its just a thought ATM.

should be fine, active doesn't require that much power compared to passive. That sounds about right for an active set up
