How the hell do i keep the screen from going from the normal black and blue screen to the white and orange screen. i found out some time ago by dumb luck i found it in the manual, but now that i'm looking for it, i can't find it at all.

The settings option you're after is only available in Standby mode.

So - in Standby mode access the internal menu via the rectangular 'Menu' button to the left of the display.
Once in that menu scroll to the 'Demonstration Mode' option.
Toggle it "Off."
Done!
