What to look for when buying a new HU and speakers....?

I will be buying a new Head Unit for my truck and 2 speakers to replace the stock pieces of crap...what do I look for when buying a good one for less than 200 dollars.

Do I look at how much peak output watts it puts out...rms watts....what....?

What do I look for when buying new speakers...or does it not matter....

Depends on what your planning on getting out of your radio? Will you be amping your speakers?

If not the wattage of the head unit is important as is the brand name of the head unit (they all use their own internal amp). In your price range I would say Alpine, Pioneer then Panasonic would give you the best sound quality. Pick between sound quality and features that you will be using. It is all personal preference.

Speakers as well. I suggest going to your local shop or Best Buy/Circuit City and listen to all the speakers they have and choose the ones you like best running off head unit power.

Well...how much would amping my speakers affect the quality and loudness? How much extra money would that be?

What number of watts should I look for when getting a HU?

What about Blaupunkt...is that a crappy brand?

Blaupunkt makes a pretty decent HU for the money. But like everyone else said, go around and listen to what sounds best to you.
