If I do 12"x12"x8.5" I should be at .70 cubic feet. What do you do to take 3/4" of thickness of wood into consideration?

so 11.25 x 11.25 x 7.75 would give me the internal then right? which drops me down to .56

Wrong.
3/4" wood for all walls of the enclosure would mean he'd need to subtract 1.5" (.75" for each wall) from each dimension.
So, you'd be at 10.5" x 10.5" x 7" = .45cuft net.
