Single amp would be best for cleaner installation, space saving and less phase issues or less hassles with strapping two amps together.
You'd want more power on tap then needed with those subs. most 1000 watt rms amps wont make 1000 because of impedance rise and voltage drops you'll most likely see around 500-700. This is the reason why lots of people say "oh my sundown SA __ can take double, no, triple! the power.
